Where Complex Carbs Are Found

Complex carbohydrates are found primarily in plant foods:

  • Legumes: lentils, chickpeas, black beans, kidney beans
  • Starchy vegetables: sweet potatoes, corn, peas, winter squash

However, not all complex carbohydrates behave the same way. Refined grains like white flour and white rice are technically complex carbohydrates, but processing has stripped away the fiber and bran that slow digestion. A slice of white bread is a complex carbohydrate that your body breaks down almost as quickly as table sugar.

Beyond Simple vs Complex

The simple/complex framework is a useful starting point, but modern nutrition science has moved toward more nuanced classifications:

Fiber content is often a better predictor of a food's health effects than whether its carbohydrates are simple or complex. High-fiber foods — regardless of whether they contain some simple sugars — tend to promote satiety, support gut health, and moderate blood sugar responses.

The degree of processing matters as much as the chemistry. A whole grain of wheat behaves very differently in your body than the same grain milled into fine white flour, even though both are complex carbohydrates.

The food matrix — the complete package of nutrients, fiber, water, and other compounds in a food — determines its overall impact more than the carbohydrate type alone.
